 Red Boat makes what many think is the world’s best fish sauce in Vietnam by fermenting the best black anchovies they can find with good sea salt. Before they bottle the sauce, they remove some of the salt and dry it.

Red Boat Salt has a salty-umami flavor, but it’s flavor takes a little time to become apparent, so wait a few minutes after salting before you tastee. We like to make a version of Nguyen’s umami mayo by mixing it with Duke’s, but it’s also great sprinkled over a steak before cooking, and it makes simply-cooked vegetables sing.
